Eagle Rare Bourbon Barrel Aged Sacrilege Sour Cherry – SOLD OUT!
Back in January, my friends at Raven & Rose offered me two freshly-dumped Bourbon barrels. Now I’m never one to say no to a good used barrel of any kind, but these were of a special provenance. You see, Raven & Rose has a habit of buying entire barrels of bourbon from various Kentucky distillers then using that single-barrel whiskey in their award-winning Old Fashioned cocktails. Yes, the barrels I was offered were two of these self-same barrels and it was Eagle Rare 10 Year Bourbon. So naturally, I aged Sacrilege Sour Cherry in one of the barrels with the idea of mixing a Stone Fence cocktail using this Bourbon barrel aged cider with some bitters and a shot of the same Eagle Rare, maybe even a cherry. Or simply enjoy it neat. The Sacrilege Sour Cherry aged for four months in this barrel and has created a taste treat unlike anything I’ve ever had.

¡Tequila Barrel Aged Tepache! – SOLD OUT
In late summer 2014 I was lucky enough to meet a barrelmonger who had recently heard rumors of a renowned Tequila producer liquidating a batch of freshly-dumped Reposado barrels. My timing was more than fortunate because I was able to quickly add Tepache to these barrels and it has been sitting for nearly 12 months now. The aroma of tequila is undeniable, along with plenty of oakiness. This Tepache concoction should age well for many more years to come. And that selfsame barrelmonger has procured two fresh rum barrels from Dominica.

Revelation Kingston Black – SOLD OUT!
This is the crown jewel of our Revelation series, which focuses on simply-fermented single variety ciders. This particular one is made 100% from Kingston Black apples from our 2014 harvest of the Skurdahl Farm in Sherwood, Oregon. Kingston Black is an vintage variety English cider apple, first grown in the cider-entrenched region of Somerset. It produces a robust, rich cider high in ABV and full of complex tannins and apple flavor. The apples are very hard to come by, small, and in high demand by cidermakers, hence the small yield and batch size. The apples were hand-picked by Rev. Nat’s employees and our head cidermaker oversaw every phase of this product’s creation from tree to bottle. Additionally, these bottles should age well.

Whiskey Sour – SOLD OUT
This starts as our most popular single variety cider, Revelation Newtown Pippin, a 6.9% ABV dry cider made from the popular American heirloom apple. We took this cider, and aged it for 1 year in innoculated Bourbon barrels which once held the Beermongers’ Birthday Blend cider. One barrel is an Elijah Craig 12 year, the other an Elijah Craig 25 year with Baudoinia (commonly used to age Goose Island Bourbon County Stout). After tasting, we noticed pronounced citrus and whiskey notes, so we took it in the direction of the flavor of a whiskey sour cocktail. We then infused the finish blend with Makrut lime leaves and the zest of Meyer lemons. The final product is pleasantly sour and citrusy, heavy on the oak and whiskey without astringent, acetone-y flavor. A true fruit sour of the cider world.

Last year, we procured an Elijah Craig bourbon barrel that had previously held both Hair of the Dog’s Cherry Adam from the Wood as well as Stone Barn Brandyworks’ Hair of the Dog collaboration Rye Whiskey. The barrel came to us with the cherries still inside, which were soaked with and resting in a pool of both Cherry Adam and the rye whiskey. In an effort to make the most of this precious barrel and liquid, we topped it off with cherry hard cider. This special treat was featured at the 2015 Little Woody festival in Bend, and a small amount of bottles were produced exclusively for Tent Show members. WARNING: This cider may not be 100% gluten-free.

Eagle Rare Bourbon Barrel Aged Revival – SOLD OUT

Yes, the barrels I was offered were two of these self-same barrels and it was Eagle Rare 10 Year Bourbon. So naturally, I aged Sacrilege Sour Cherry in one of the barrels and Revival in the other! The Revival emerged much more spirit-heavy with huge notes of coconut and vanilla to compliment the tropical notes in the base cider.

F.H. Steinbart Collaboration: Sacrilege Sour Cherry with Noyaux – SOLD OUT
Together with the staff at F.H. Steinbart, the oldest homebrew shop in the world, we cracked 1-year cured apricot pits to harvest a healthy amount of the almond-scented noyaux (apricot nut). We then infused our Sour Cherry cider with these delicious morsels. The opportunity to purchase these bottles will be in-person only at the end of the year Tent Show party. Details coming soon!
